    “I’ve been a vegetarian for more than twenty years. While I have included a little fish in my diet from time to time, I haven’t eaten red meat or processed meat in twenty-five years. Twenty-two years ago, I gave up poultry and shellfish. I’ve maintained a 63lb weight loss for thirty years. I eat unprocessed, complex carbohydrates, mostly organic. I eat fruit, vegetables, beans, lentils, chickpeas, quinoa, and oats. I also eat a moderate portion of potato or sweet potato almost every day! Oh, and I eat bananas and other delicious fruits – yes, I really do! Being married to Zak for thirty-four years, I adopted a Mediterranean-style approach to food years ago. Zak is from Portugal and he introduced me to olive oil, avocado, and fresh food at every mealtime. It’s simply a way of life for us now.

    I don’t eat very much dairy produce at all – just a little authentic Greek yoghurt now and then and a little feta or halloumi cheese. We make our own almond milk and it’s surprisingly easy. I also have a very low wheat diet. But there’s so much we do eat – every vegetable, legume, and fruit under the sun – every day we have nuts, seeds, olive oil and avocado, garlic and tomatoes. We use lots of fresh herbs in our cooking, and a few healthy spices too.

    I get plenty protein from plant-based foods. Vegetables and fruits give us fibre, antioxidants, vitamins, minerals, and enzymes required for optimal health. These healthful foods also contain phytonutrients and carotenoids - powerful antioxidants that are known to protect against cancer and other killer diseases. Carotenoids also nourish the eyes and help prevent macular degeneration. Eradicating essential carbohydrates deprives the body of a great many nutrients. To cut out these healthful foods is madness – and completely unnecessary for weight loss. But of course, there are bad carbohydrates and these are the ones to eliminate from our daily diet – sugar, white flour, and many other processed foods are the cause of the obesity emergency we’re seeing globally. Cutting out all carbs is unnecessary and would result in many people having health consequences in years to come.

    I’ve spent 30 years observing and listening to tens of thousands of people in the UK and the USA. I’ve lived through every dietary principle and all the fads and even the “medical solutions” that merely contributed to the obesity epidemic and still do – I’ve watched people struggle to follow fads and I’ve seen them regain weight and suffer health consequences with the passing of time.

    The body needs something from each of the 3 macronutrients – the body needs fat – the body needs protein and the body needs carbohydrates. Distinguishing between the good and bad is the key to health, vitality, and being the weight that’s right for you.
